Body Tip of the Day: Pasta with Lentils

Pasta With Lentils

SERVES 4-6

INGREDIENTS

1 package small pasta, I use shells or elbow macaroni
1/2 cup lentils (cook for 30 minutes)
1 can whole tomatoes
1/2 head of garlic, minced
1/2 cup flat leaf parsley, chopped
sea salt
pepper
olive oil

PREPARATION

In separate pan, boil pasta.

In separate pan, boil lentils.

For the sauce:

Saute garlic in olive oil until golden brown (being careful not to burn), add tomatoes and let simmer for 15-20 minutes (long enough to get the water out). When tomatoes are soft, mash with a potato masher, until fine. Continue cooking 10-15 minutes and add salt, pepper, and parsley. Season to taste. In serving bowl, mix all ingredients together. Bon Appetit!

***I sometimes substitute brown rice for pasta
