<p>Thank you to my good friend, Warren Kramer, for this fantastic recipe!</p>
<p>SERVES 4</p>
<p>INGREDIENTS</p>
<p>8 oz tempeh, cut into cubes<br />
1/2&#8243; piece kombu (found in the seaweed aisle)<br />
1 stalk celery, sliced<br />
1/4 cup red onion, diced<br />
1/4 cup parsley, chopped<br />
1/4 cup carrots, grated<br />
2 dill pickles, diced<br />
2 tsp dijon mustard<br />
1-2 cloves garlic, minced<br />
4 leaves romaine lettuce, washed<br />
1 avocado, sliced<br />
1 tomato, sliced<br />
8 pieces sourdough bread, preferrably yeast free</p>
<p>INGREDIENTS FOR DRESSING</p>
<p>1/2 lb soft tofu, steamed 3-4 minutes and cooled to room temperature<br />
2 Tbs lemon juice<br />
1 Tbs tahini<br />
sea salt<br />
1 tsp dijon mustard</p>
<p>PREPARATION</p>
<p>Poach tempeh in water with kombu for 10 minutes. Let cool completely.</p>
<p>When tempeh has cooled, crumble with hands into mixing bowl. Add celery, onion, parsley, and carrots.</p>
<p>In blender or food processor, blend tofu, lemon juice, tahini, sea salt, and dijon mustard. Blend well. Add pickles, dijon mustard, garlic and mix well, do not blend in blender. Gently mix tempeh salad.</p>
<p>Assemble sandwiches with tempeh salad, romaine, tomato, and avocado. Enjoy!</p>
<p>**for a lighter variation, use romaine leaves for lettuce wraps instead of bread</p>

<p>Did you know the symptoms of  a heart attack can be different for men and women? Here are a few warning signs to look out for:</p>
<p>&nbsp;</p>
<p>Men:<br />
- pressure or pain in center of the chest that lasts more than a few minutes<br />
- pain or numbness spreading to the face, neck, arms and usually on one side<br />
- severe headache and light-headed, sweating, nausea, pale, shortness of breath<br />
- back pain</p>
<p>Women:<br />
- unexplained fatigue<br />
- poor sleep accompanied by anxiety<br />
- shortness of breath, without pain<br />
- unusual attacks of indigestion accompanied by back pain, jaw or teeth pain, ear pain</p>

<p>This recipe was given to me by my dear friend, Counselor, and Guardian Angel, Mina Dobic. I hope you enjoy it as much as I do!</p>
<p>INGREDIENTS</p>
<p>2 cups cooked brown rice (I use short grain)<br />
3/4 cup vanilla soymilk<br />
1/2 cup maple syrup<br />
pinch of sea salt<br />
1/2 tsp cinnamon<br />
2 Tbs raisins<br />
*1/2 Tbs agar agar flakes (found in the seaweed aisle. I use Eden brand)<br />
1/2 package fresh strawberries, sliced<br />
1/2 package blueberries</p>
<p>* agar agar is a tasteless sea vegetable that is the alternative to gelatin.</p>
<p>PREPARATION</p>
<p>In small bowl, combine agar agar and half of the soymilk and set aside for 10 minutes.<br />
In medium pot, over medium flame, combine all other ingredients except for berries. Mix well and cook 5 minutes. Add agar agar and soymilk and mix well. Cook 5 more minutes. Pour into bowl and let cool completely. Garnish with berries and enjoy!</p>

<p>Did you know that these 3 basic kitchen supplies can be harmful to you and our environment?</p>
<p><strong>Trash bags:</strong> Plastic trash bags break down into toxic pieces that contaminate our soil and waterways that eventually get into our food chain. There are a few selections of biodegradable trash bags, they are also non-GMO! Or of course, reusable tote bags are even better.</p>
<p><strong>Sponges</strong>: Most colorful and really soft sponges are made from toxic chemicals, dyes, and plastics that are harmful to our bodies and our planet. There are a number of unbleached and undyed plant based sponges on the market these days. They work just as well and are a much better choice for us!</p>
<p><strong>Paper towels</strong>: Paper towels are one of the highest used kitchen supplies today. We all use them, but how much are you wasting and at what cost?<br />
This is a startling statistic: In the United States alone we consume more than 3000 TONS of paper towels a DAY!  It takes 17 trees and 20,000 gallons of water to make just 1 ton of paper towels. That&#8217;s 51, 000 trees and 340,000 gallons of water daily! This dramatically contributes to deforestation!<br />
I&#8217;m not suggesting to stop using paper towels, trash bags, or sponges. I am however, suggesting that you be more mindful of what you are using and how much?</p>
